3 garlic cloves, minced
1/2 medium shallot, finely chopped
1/4 cup hot honey
2 tablespoons fresh lime juice
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
4 skinless cod fillets (about 5 ounces each), thawed if necessary
2 teaspoons chopped fresh chives
1. Preheat oven to 400°; line rimmed baking pan with nonstick aluminum foil and spray with cooking spray. In small bowl, whisk garlic, shallot, honey, lime juice, salt and pepper. Makes about 1/2 cup.
2. Place cod on prepared pan; brush with 1/4 cup garlic mixture. Roast cod 10 minutes; brush with remaining 1/4 cup garlic mixture. Turn broiler to high; broil cod 2 minutes or until golden brown and internal temperature reaches 145°.
3. Serve cod sprinkled with chives.
