Arrange the two halves, cut side down on a lined baking tray, drizzle with 2 tbsp of olive oil and season with salt and pepper. Roast for 30 minutes.<br \/>\n<\/span><\/p>\n<p><span class=\"recPrep\"><span>3.<\/span>Meanwhile cook quinoa according to packet instructions and fluff up with a fork.<br \/>\n<\/span><\/p>\n<p><span class=\"recPrep\"><span>4.<\/span>In a frying pan saut\u00e9 the onion, garlic and celery with some olive oil. Soften and remove from heat when golden.<br \/>\n<\/span><\/p>\n<p><span class=\"recPrep\"><span>5.<\/span>Add this to the quinoa alongside the cranberries, pomegranate seeds, lemon juice, parsley, sage, mint, cumin and season with salt and pepper to taste. Toss until combined and add half of the Violife Just Like Cheddar Shreds stirring until melted.<br \/>\n<\/span><\/p>\n<p><span class=\"recPrep\"><span>6.<\/span>When the butternut squash is ready, use a fork to remove the roasted pumpkin from its skin, carefully not to harm the shape of the pumpkin, which will be used as a serving bowl.<br \/>\n<\/span><\/p>\n<p><span class=\"recPrep\"><span>7.<\/span>Add this to the quinoa mixture, stir together and spoon the filling onto the butternut squash.<br \/>\n<\/span><\/p>\n<p><span class=\"recPrep\"><span>8.<\/span>Sprinkle with remaining Violife Just Like Cheddar Shreds and place in the oven for a further 10 minutes until the Violife is nice and melted.<br \/>\n<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Roasted Butternut Squash with Quinoa Prep: 1 hour 10 minutes \u2022 Serves: 4<\/p>\n","protected":false},"author":1,"featured_media":0,"comment_status":"closed","ping_status":"open","sticky":false,"template":"","format":"standard","meta":{"_mi_skip_tracking":false},"categories":[43,8,5],"tags":[],"yoast_head":"<!-- This site is optimized with the Yoast SEO Premium plugin v19.7 (Yoast SEO v20.7) -
