\nGolden Raisin Irish Soda Bread Muffins<\/span><\/p>\n

<\/span>Nonstick cooking spray
\n2 <\/span>cups all-purpose flour
\n3 <\/span>tablespoons plus 1 teaspoon granulated sugar
\n3\/4<\/span>teaspoon baking soda
\n1\/2<\/span>teaspoon salt
\n1\/8 <\/span>teaspoon ground cloves
\n3\/4<\/span>cup golden raisins
\n2 <\/span>tablespoons unsalted butter
\n1 <\/span>large egg
\n1 <\/span>cup reduced fat buttermilk <\/p>\n<\/div>\n

1.<\/span>Preheat oven to 375\u00b0. Spray 12 standard muffin cups with cooking\u00a0spray.
\n<\/span><\/p>\n

2.<\/span>In large bowl, whisk flour, 3 tablespoons sugar, baking soda, salt and cloves; stir in raisins.
\n<\/span><\/p>\n

3.<\/span>In small saucepan, melt butter over medium heat. In medium bowl, whisk egg, buttermilk and butter; add to flour mixture and stir just until combined. Makes about 4 cups.
\n<\/span><\/p>\n

4.<\/span>Divide dough into prepared cups; sprinkle with remaining 1 teaspoon sugar. Bake muffins 15 minutes or until golden brown and toothpick inserted in center of muffins comes out clean; cool 10 minutes in pan.
